A traditional country pub on the outskirts of Bollington has some new faces behind the bar.

Ernst Van Zyl and Sarah Richmond signed a long-term lease agreement three months ago for The Lord Clyde, which is known for its welcoming and cosy feel.

For Ernst and Sarah, this is there first pub having gained a wealth of experience in the hospitality industry over the last 20 years.

“We have been looking for the perfect pub for a while now and the Lord Clyde ticked all the boxes with its stunning location. It is the perfect size with lots of potential for further development and growth, and has the opportunity to create something unique,” said Sarah.

Ernst, who has previously worked as a chef for the last 17 years in a variety of establishments, last year achieved two AA Rosettes at Etrop Grange Hotel and has also completed stages at four of the world’s best restaurants including The Fat Duck and Noma in Copenhagen.

Since taking on the pub, they have introduced a new food menu: “The menu have changed to our style of modern interpretations and cooking, using the best of the seasons and foraging our surroundings,” said Ernst.

“We have changed the wine list to showcase our love for wine and to complement our food, style and service. We have hosted a food and wine match dinnerin November which was really popular and will look to do it again.”

The drinks selection has also been expanded to include ales from more local breweries.
